SPOKE WITH THE HEAD CHEF ABOUT THE COMPLAINT THAT WAS REPORTED TO THE HEALTH DEPARTMENT--THE COMPLAINANT REPORTED A MALFUNCTIONING WALK-IN COOLER AND DISHWASHER.
ONCE IT BECAME KNOWN THAT THE WALK-IN COOLER WAS MALFUNCTIONING ON MARCH 27, 2020, ALL SPOILED FOOD ITEMS WERE THROWN OUT AND AN EMERGENCY REFRIGERATED TRUCK WAS BROUGHT ONSITE FOR FOOD STORAGE. NO DISCARD FOOD LIST WAS CREATED. THE FOOD TRUCK WAS INSPECTED AND THE INTERIOR TEMPERATURE OF THE TRUCK WAS OBSERVE TO BE 36F. FOOD STORAGE AND LABELING MEETS CODE. IN ADDITION, THE USE OF SINGLE-USE DISPOSABLE FOOD TRAYS AND UTENSILS WERE IMPLEMENTED WHEN THE DISHWASHER BEGAN MALFUNCTIONING. THERE IS A WORK ORDER TO GET THE DISHWASHER FIXED. UNTIL THE DISHWASHER IS FIXED, ALL SOILED FOOD EQUIPMENT IS BEING WASHED IN THE 3-COMPARTMENT SINK USING THE WASH, RINSE, SANITIZE METHOD. NO IMMINENT HEALTH HAZARD OBSERVED. |
